You can appreciate a true work of art, as the water flows through an intricate network of waterways and evaporation pools that have been in continual usage dating back to pre-Incan times.

Your next stop will take you to Moray, an archaeological site shaped as an amphitheatre, believed to be utilized as an agricultural experimental station by the Incas. Three natural limestone sinkholes were ringed with concentric terracing, each providing unique temperatures and soil mixtures to reflect the varied growing conditions found across the Incan Empire. Later on, you will enjoy a savory lunch in the heart of the Sacred Valley of the Incas.

Afterwards, you will learn about Casita Huarán. Today after breakfast, you will head to Huatata, a very special and unique place inside the Sacred Valley. This small village is the home town of a natural-born culinary wizard, Manuel Choqque is a fourth-generation farmer from Huatata. After studying agricultural engineering in the Peruvian capital, he returned to his hometown to take over the family business and focus on the natural genetic improvement of native potatoes known as ocas and mashuas.

He began collecting ancestral potato varieties by himself as a hobby, studying products from Inca and preInca cultures that were no longer used. Today, he has more than 380 varieties of native potatoes, which he improves by imitating bees with manual cross-pollination.

During his research, Manuel discovered that the oca (oxalis tuberosa) contained high levels of sugar and therefore had the potential to be used for alcoholic beverages. After two years of research and experimentation, he launched his own oca wine, which he called Miskioca which, in this fascinating and unique experience, you will taste along with a wide different type of potatos flavoured with local sauces.

Afterwards, you will enjoy a special lunch, Pachamanca, which is a dish with profound cultural significance for the peasant society of Perú. How this dish is prepared is also amazing. The ingredients (Beef, pork, chicken, and vegetables) are previously seasoned with some species like Chincho, huacatay, pepper, and some others. Then all ingredients are cooked or baked with the aid of hot stones in an earthen oven.

It is believed that more than 20 thousand men extracted the stones from the nearby quarries and moved it 20 kilometers to the hill of the city of Cusco. How the Incas built Sacsayhuaman with structures of an unlikely weight and size for the time? Many questions are still a mystery. There lies the beauty of this archaeological site.
